Hey Guys!
Got a homemade Larabar recipe from Lisa Gawley (Andrew & Lisa are part time RCFP volunteer staff). Super yummy, easy to make and a great alternative to crack bars:
Dried apricots (maybe 8)
Dried blueberries/cherries/cranberries/dates/etc (any dried fruit you want - try to get ones with minimal sugar! Use about a handful of them)
1 to 2 cups unsweetened coconut
raw sunflower seeds
almondsPut things into a food processor and blend away! Then, add a few tablespoons of honey to make it all stick together. You can add the honey while still blending in the food processor.
Place mixture in a pan on parchment or wax paper & freeze until hard. Then cut into chunks. Excellent for on the go.
Enjoy!

Chinese Cabbage Stir-Fry
Stir-Fry Ingredients:
3 chicken breasts, cooked and cubed
2 cups broccoli florets
3 carrots, peeled and sliced
1 onion, thinly sliced (optional)
1 green pepper, cut into pieces
1/2 head of cabbage (a normal-sized cabbage, that is)
1 can of pineapple chunks or tidbits
2-3 Tbsp. coconut oil or oil of choiceSauce Ingredients:
Juice from pineapple
2 Tbsp. arrowroot
1 tsp. garlic salt
1/2 tsp. ginger
1/2 tsp. salt
1/2 tsp. pepper
2 Tbsp. Apple cider vinegar
1/2 cup waterDirections:
1. Steam carrots and broccoli to desired tenderness.
2. Chop cabbage into strips or pieces.
3. Drain and reserve juice from pineapple chunks.
4. Mix pineapple juice and arrowroot in a bowl and whisk until blended.
5. Add the rest of the “sauce ingredients” to the bowl.
6. Cook sauce in a medium saucepan over medium heat until thickened.
7. Cook onion, pepper and cabbage (and chicken, if it is not warm already) in oil in a large skillet until veggies are tender.
8. Add pineapple, carrots, broccoli (and chicken if not already in the skillet) to the skillet.
9. Pour thickened sauce into skillet and stir to coat. Cover and cook 1-2 more minutes.Enjoy!

Here's another recipe
Beasty BBQ Sauce
Ingredients:
3 Tomatoes, Diced
1 White Onion, Diced
4 Cloves of garlic, Diced
1 6 Ounce can of Tomato Paste
1 Cup Beef Stock
2 Tbsp Dijon Mustard
2 Tbsp Apple Cider Vinegar
1 Tbsp Extra Virgin Olive Oil
2 Tbsp Sweet Paprika
1 Tsp Sea Salt
1 Tsp Cayenne
For sweetness add 1 Can of diced pineapple
Process:
Combine all ingredients above in a sauce pan and place on stove over medium heat stirring frequently
Once your sauce starts to boil, reduce heat to low, cover, and simmer for 60 minutes
Once your sauce has simmered, turn off the heat and pour your sauce into a blender or food processor and run until you get a nice smooth sauce consistency
Return to the pan to keep warm or place on the food of your choice
Store in the refrigerator

CrockPot Pulled Pork
Ingredients:
4 Lb bone in pork shoulder
4 Tbsp Smoked Paprika
2 Tbsp Sea Salt
2 Tbsp Chili Powder
2 Tbsp Ground Cumin
1 Tbsp Ground Black Pepper
1 Tbsp Dried Oregano
1 Tbsp Ground White Pepper
2 Tsp Cayenne Pepper
1 Full batch of my Beasty BBQ Sauce
Process:Mix all of the above ingredients except the pork shoulder and the BBQ sauce in a small mixing bowl, mix it all well making your spice rub
Massage the spice rub all over the meat in every crevice you can find
Wrap tightly in a double wrap of plastic wrap and refrigerate for at least 3 hours, I did mine overnight. You can refrigerate this for up to 3 days
Unwrap the roast and place it in your crock pot, add 1/4 Cup of water and turn your crock pot on low and cook for 8-10 hours until the meat is fork-tender
Transfer your roast to a cutting board and discard all the liquid in your crock pot
Pull the meat apart by tearing the meat into thin shreds with two forks or your fingers
Place all the shredded meat back in the crock pot and toss with a full batch of my Beasty BBQ Sauce and heat on low for 60 minutes until hot.

Here is one more recipe.
Texas BBQ Sauce
Ingredients:
1 cup water
1 cup ketchup
1/2 cup cider vinegar
1/4 cup butter
1/4 cup minced onion
3 stocks celery, chopped
3 tablespoons Worcestershire sauce
2 tablespoons spicy mustard
2 tablespoons honey
2 cloves garlic, minced
1 beef bullion cube
1 tablespoon paprika
2 teaspoons chili powder
salt and pepper to taste
Preparation:
Melt butter in a medium sauce pan. Add garlic, onion, and celery. Saute until lightly browned. Add water and bullion cube. Stir until bullion is dissolved. Add remaining ingredients, stir and simmer for about 15 minutes.Posted 1 year ago #
